Caffeinated “Chocolate-Covered Strawberry” Breakfast Smoothie

What did you have for breakfast today? I had a Caffeinated “Chocolate-Covered Strawberry” Breakfast Smoothie 👌🏼
Coffee•chocolate protein powder•banana•frozen strawberries•local honey

This was the perfect breakfast as I had little time today to drink my coffee and/or eat breakfast before I ran out the door. The best part is that it tastes great! 
It’s literally like a treat for breakfast.… And it’s actually good for you! If you don’t like coffee, you can substitute the coffee for chocolate almond milk 😁. YUMM!

Crock Pot Chicken Fajitas/Bowls!

One of the FASTEST and EASIEST meals to throw together! My biggest pet peeve with crock pot meals is how so many recipes still require you to cook the meat before adding it to the crock pot… this one DOESN’T! 😁

1-2lb  chicken (I use frozen and throw it right in!)

1/2 -1 chopped red onion (depending on your preference and how much chicken you use)

1/2-1 chopped green pepper 

Mix 1 packet of taco seasoning with 1/2 jar of salsa. 
Throw everything in the crock pot, mix it all up, and cook on low for 6/8 hours.  Once it’s done, shred the chicken with two forks and place in soft taco shells with cheese and sour cream!   YUMMMM!!!

I, personally, skip on the fajita wrap and make it a rice bowl using rice I make to pair with the fajitas. I top that with sour cream and cheese and mix it all together (pictured below).  I make the rice right before we eat, because it’s fast and easy.  

Prepare rice as usual…. 

in another sauce pan, mix black beans and corn and cook until done. 

Add beans and corn to the rice and add a little butter, adobo seasoning, and fresh ground pepper…YUMMM!!! 

This meal is a little higher in Sodium than I’d prefer, but it’s still better than having to order takeout! 👌

Healthy Pumkin Spice Latte’

I know I know… Starbucks is “soooo good”, but have you ever looked at how BAD it is for you?  This is a great alternative to their Pumpkin Spice Latte’ that won’t leave you dragging from all that unneeded sugar and “fake” flavoring after the caffeine wears off… and your waistline will thank you, too, because it’s much healthier and has less calories!!! 👌🏼

I mix this with my imitation Nutribullet(the real one broke!☹️️) and drink it right out of that container for convenience!  If I am making it for more than myself, I’ll use a regular blender and we will drink out of a regular coffee cup. 



Coconut oil (about a tsp per serving of coffee 

Pumpkin pie spice (I do one dash… I’m thinking about 1/8 tsp?)

Honey for sweetness…. modify this to your liking. Start small and you can always add more 😁

Vanilla extract (about 1/4 tsp)

Milk of your choice (the same amount you’d put in your cup of coffee).  I use almond milk, usually!
BLEND AND ENJOY! Top with a pinch of pumpkin spice to make the froth even prettier!
**all of the ingredients can be modified to increase or decrease the flavor and sweetness! Play around with it and see what you prefer.  Either way, it’s a great way to start the day!

Chocolate Chip Oatmeal “Cookies”

These 3-ingredient(4 with my added honey recommendation), healthy cookies are a big hit in our household!
The kids devour them and don’t even realize they are eating something healthy! 👌🏼 
Preheat oven to 350

•2 bananas, mashed

•1 3/4 cup quick oats

•1/4 cup chocolate chips 

Mix all ingredients, place on cookie sheet in 1-2inch sized globs, and bake for 15-20 minutes. *The only difference I make is adding local honey for added sweetness.   

I also double the batch because we eat them too quickly 😁

Other variations would be to add raisins instead of chocolate chips, or cinnamon and honey with walnuts and dried cranberries… YUMMM!

 It reminds me of a HEALTHY fruit roll up or fruit snack… only it doesn’t leave me feeling sluggish or guilty after I eat it!

Wake up…and EAT!

Good morning, everybody! Let’s rise and shine and start the day off right! 👌🏼

How so? With BREAKFAST, of course!

So, you’re probably reading those first few words thinking to yourself, “Oh great here we go… Another lecture about how breakfast is the most important meal of the day… Yada yada yada…”

BUT IT’S THE TRUTH! Don’t believe ME? Check out for a great, factual article on the benefits behind eating breakfast.
When you start your body off with the RIGHT TYPE of breakfast, you are adding fuel to your body’s “fire” to make your entire day more productive and efficient! You wouldn’t put water in your car’s gas tank would you? Well, your body needs a certain type of fuel, too… and the best time to introduce your body to its needed fuel is as soon as you wake up in the morning!

With today’s Internet-focused world, you can find an abundance of healthy breakfast ideas that you don’t even have to make that day. I usually rotate between a few of the same ones that I have grown accustomed to and actually CRAVE when I wake up in the morning.

My top three choices are:
1. Refrigerator Apple cinnamon oatmeal

2. A breakfast smoothie

3. Egg, sausage, and cheese muffins

The three of these are in no particular order to my favorite and I like to switch it up throughout the week. There are many other options, as you may have read in, but I want you to understand that choosing a HEALTHY alternative to breakfast will really make a difference in your overall day! You will feel better, you will be more productive throughout the day, you won’t feel hungry as quickly, and some may think that this is the biggest benefit of all…. Your body will probably begin to LOOK better because you’re boosting your metabolism!

Just remember three easy words to the key of each days start…

Kale, strawberries, almond milk, honey, chia seeds, and a banana blended to PERFECTION 👌🏼 
I paired mine with an apple on the side to start my day off on the “right foot”!
I love trying different combinations with my smoothies. At times, I’ll add yogurt or protein powder for a more fulfilling drink.  The main thing to remember is to ALWAYS add spinach or kale (you cannot taste it, but it adds so much nutritional value!)
I also prefer to always add a banana because of the texture it makes.  
Another favorite of mine is combining frozen organic strawberries, kale, chocolate almond milk, chia seeds, a banana, and peanut butter. YUMMM!!!
