Homemade waffles!!!

Have you ever looked at what is in store-bought waffles?! Well, let’s just say that making your own is much better for you, saves money, and tastes amazing!  I make large batch and freeze whatever we don’t eat. When it’s time to eat them, I pop them in the toaster to thaw and brown a little more and…. voila! πŸ‘ŒπŸΌ


I found a single-serve waffle maker at Marshalls (of course! It’s my favorite store!) and have used it regularly. It was only $7.99!


This waffle recipe has become a new favorite of ours:

For the batter

2 eggs

2 cups all-purpose whole wheat flour

1 3/4 cups milk

1/2 cup applesauce (in place of the oil in traditional recipes). I used cinnamon applesauce today… yumm!

1 tablespoon brown sugar

1 tablespoon organic cane sugar 

4 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon vanilla extract

*this makes about 15-16 single-serve waffles, so I will sometimes cut it in half if I don’t plan on freezing the extras 
Toppings 

I put frozen strawberries and blueberries together, warm them, and add a sprinkle of sugar to make a good glaze. 

You can also sprinkle powdered sugar on, or even make “icing” by mixing powdered sugar with a teaspoon of milk… not the healthiest, but still better than store-bought!

AMAZING Avocado Salad!Β 

This was the first time I made this, but it will surely NOT be my last!  It was delicious, filling, quick and easy, and inexpensive! 


2 avocados cut into cubes

1 green or red bell pepper chopped 

1 small cucumber, cut into small pieces (I peel mine first)

1/4 cup red onion chopped

1 can chickpeas -drained and rinsed 

Kalamala olives (optional)- I used 1/4 cup

Feta (I used 6 oz)

Grape tomatoes (I used 3/4 of a pint) cut in half or quarters, depending on their size 

1/4 cup olive oil

2 teaspoons red wine vinegar

juice of 1/2 lime

juice of 1/2 lemon

1/2 teaspoon oregano

1/2 teaspoon minced garlic

Salt and pepper to taste
Mix everything together, being careful not to mash the avocado, and ENJOY! πŸ‘ŒπŸΌ

**this salad is also great if you add chicken. I have added my weekly-made shredded chicken cooked in garlic powder, salt, pepper, and chicken broth and it is a perfect pairing!

It makes the salad more of a dinner or heavier lunch and we cannot get enough of it either way!

SMOOTHIE BOWLS = HEAVEN IN MY MOUTH!

All ready for the morning! πŸ‘Œ 


 This is a great breakfast that can be made the night before. I pour it into a Pyrex bowl and put the toppings into a sandwich bag. 
QUICK. SIMPLE. EASY. and HEALTHY 😁
No excuses for not starting the day right!
I have loved smoothies for a long time, but the bowl gives it a whole new level and the toppings create more texture and make it seem more meal-like…. And it tastes AMAZING!

This Smoothie Bowl:
Blended kale, carrots, strawberries, blueberries, chia seeds, banana, and a splash of coconut milk. Top with dried pineapple, coconut, banana chips, cranberries, papaya, walnuts, and cashews! Heaven in my mouth! 

*all of my toppings are an organic mix I buy at Marshall’s… yes, Marshall’s! It’s my absolute favorite store! That have so many organic/healthy snacks!!!

Berry Water Kefir = PROBIOTIC SUCCESS!

So, you have probably heard of Probiotics by now, and may know how good they are for so many things…. but have you heard of Water Kefir?!

 If not, you’re missing out on a great way to get your probiotics NATURALLY and basically for FREE (except for what you flavor the water with)!  

I always become skeptical when taking a pill-form of anything, so when I found out about this alternative for probiotics, I had to try it!

I wanted to try the “lemonade” one that she made, but we used all of the lemons. Therefore, I improvised and followed this recipe for the Berry Water Kefir:

It turned out great! The kids love it and after drinking it for a few days, I already feel the positive results.  What’s even better is that it’s much less expensive that the pill-form of a probiotic I had been taking before.  

The cultures quickly multiply, so I now make double batches and even had enough to give away!
I have to admit, it is a “new process” that took me some time to learn fully, but I am so glad I invested that time for mine and my family’s health.  I would recommend this to anyone that can take a Probiotic!

Healthy “Almond Joy” Oatmeal!!!

I wanted to change up my breakfast this morning and improvised this recipe. 

Little did I know, it is like “heaven” in a bowl, as my son would say!  It is probably one of my new favorite ways to make oatmeal!
Ingredients:

*Dry Oatmeal (I use 1/3 cup)

*Chocolate Almond Milk (I use 2/3 cup)

*Coconut oil ( 1 tsp-1tbsp per serving, depending on how much you want the coconut flavor to come through)

Microwave and ENJOY!  

*you can make it via stovetop, but I don’t have time in the morning, so I choose to use the microwave when I get to work πŸ‘ŒπŸΌ

Walmart’s Curbside Pickup!

After this long day at work, the last thing I want to do is spend an hour or more grocery shopping… I WANT TO SPEND QUALITY TIME WITH MY BOYS! I decided to try Walmart’s new curbside pick up and I am so glad that I did! 

As I approached the store, I checked in to the designated area and gave my receipt number. It then informed me to go to a specific lane to wait for my groceries to be brought out. 

The young man that brought my items out was above and beyond helpful and assisted me at putting everything into my car, which took about two minutes total! He also explained to me that they, the employees, love this new service because it minimizes congestion in the store. I said to him, “some people call this lazy” and he replied with, “well, we call it efficient” and I could not agree more! 

 I will absolutely recommend this service to anybody; especially people with children that don’t want to spend countless and excruciating hours trying to grocery shop with them.

“Chunky Monkey” Pops and Nice Cream!!!

Tonight’s dessert was a combination of delicious frozen treats that are actually good for you! They’re great for snacking, too, and will satisfy that sweet/salty craving without leaving you feeling guilty!!!
For the Pops, I sliced bananas and put toothpicks in them to make them single-serving treats. Next time, I plan to something else because the toothpicks are sharp, but it still works!
Freeze them for at least 1 hour, then dip in melted chocolate, followed by crushed peanuts.  Return to parchment paper and enjoy! Freeze anything you don’t eat immediately and enjoy them when you want!  Everyone LOVED them!

The nice cream was so easy, and tasted SO GOOD!  I sliced 4 bananas and laid the slices flat on a plate to freeze with the Pop ones.  When they were frozen, I added them to the blender with some peanut butter and a splash of vanilla flavoring. If the bananas aren’t blending well, they may need to sit out for a few minutes to thaw a little.  Carefully push them down toward the blade with a spoon to make them smoothly blended to an ice cream consistently. When that was done, I added a little broken chocolate and hand-mixed it in. 

I store it in a small Pyrex container and we enjoy it as we wish.  DELICIOUS!!!!
